The sauce for burger night
This is the Epic sauce from Monday's burger lunch. Mayo, ketchup, sweet pickle relish and a little vinegar. Creamy, sweet and tangy, with enough pickle in there to hold its own on a cheeseburger.
Chop the relish fine and give the sauce an hour in the fridge. Then spoon it onto your burger. It also makes a good dip for fries or tots. The Wagyu smash burger recipe is already here when you need the rest of dinner.

Instructions
Mix and rest
- Chop any large pieces of relish fine. Whisk the mayonnaise, ketchup, relish, sugar and vinegar together until the sugar dissolves.
- Cover and refrigerate for at least 1 hour so the flavors come together.
- Stir and taste. Add salt only if it needs it. If the sauce is too thick to spread, whisk in water a teaspoon at a time.
- Spoon onto burgers or serve as a dip. This batch makes about a scant cup, enough for 10 burgers with a little left over.
Recipe notes
- Use sweet pickle relish for this version. Dill relish makes a different, less sweet sauce.
- Start without added salt. The mayonnaise, ketchup and relish already bring plenty.
